Intercontinental Hotel Kuala Lumpur's in-house Japanese restaurant Tatsu is hosting a sake pairing dinner from now to 16 May 2018, where five of sake brand Saito's finest products are paired together with 6 courses of Japanese cuisine by Tatsu's chef Tommy Kuan Koon Seng.
Saito sake, which originates from Kyoto Japan, is made from Yamadanishiki rice (or King of Rice), that categorises the sake as a premium range. Since sake is made from rice and water, the latter is very important and Saito only uses Fushimizu, a spring water that can only be obtained in Kyoto. The minerals contained in the water play an important role in influencing the sake's taste and flavour.
Each dinner course is carefully curated by Chef Tommy to go perfectly with Saito's sakes. The entrée of oyster tempura with yuzu dressing is enhanced by the citrusy Saito Yuzu Hikari while the Saito Karakuchi gave the accompanying Kanpachi sashimi rolled in avocado, daikon, baby sprouts, squid and ohba dressing a slightly richer, crisp flavour.
Japan Wagyu A5 Teppan Batayaki
The highlight of the six-course meal has to be the melt-in-your-mouth Japan Wagyu A5 Teppan Batayaki that's served with asparagus, mixed mushrooms teppan, crispy garlic chips, and sake and butter soy sauce. The Saito Super Premium Junmai Daiginjo that comes with it is rich in fruity flavour and acidity.
The Saito Sake pairing dinner is only available from now until 16 May 2018 at RM350nett per person.
