1. Summer Palace x Wai King Kok Four Hands Series

This December, Summer Palace at Regent Singapore presents a rare four-hands experience with house Executive Chef Liu Ching Hai and Executive Chef Alan Gan of Wai King Kok, Waldorf Astoria Shanghai on the Bund. The collaboration brings a specially curated tasting menu that showcases the duo’s combined mastery of refined techniques, premium seasonal produce and precise, elegant flavours that reflect both chefs’ shared philosophy Cantonese and Hakka flavours. Expect pristine seafood preparations to slow-cooked broths rich in collagen, and reinterpretations of heritage favourites. 2. Maker’s Mark Cellar Aged at bar.ter

bar.ter brings the acclaimed Maker’s Mark Cellar Aged, the distillery’s most mature expression to Singapore with a special tasting series running every Monday and Tuesday this December. Known for its combination of older and younger bourbons matured in the limestone whisky cellar at Makers Mark Distillery, Cellar Aged features profound depth, honeyed spice, roasted oak and an elegant, elongated finish. bar.ter’s tasting experience offers guests a rare opportunity to appreciate the nuance of this expression in a guided format, complemented by the bar’s signature whisky-forward approach. 3. Octomore Series 16 Immersive Exhibition

Bruichladdich’s boundary-pushing Octomore Series 16 arrives in Singapore with a three-day immersive exhibition at Stamford Arts Centre with a multisensory showcase built around the world’s most heavily peated single malt. The exhibition explores the brand’s ethos of experimentation, from its sky-high PPM levels to its single-estate Islay barley and diverse cask maturations. Visitors can expect scent-driven installations, soundscapes, guided tastings and storytelling zones that chart the whisky’s evolution. The exhibition also spotlights three expressions: 16.1, 16.2 and 16.3, each representing different cask journeys and barley origins from Mainland Concerto to single-field Islay barley. Guests purchasing all three bottles receive an exclusive tasting set.

4. Horatio’s Curious Companions: Gagan Gurung

Horatio at Resorts World Sentosa closes the year with a tea-driven guest shift featuring Gagan Gurung, founder of Hong Kong’s acclaimed Tell Camellia. For one night only, Gagan brings his philosophy of “farm to bar” tea mixology to Singapore, presenting signatures such as the Teapresso Martini, Rock Paloma, Tea’s Knees, and a password-only creation revealed via Horatio’s Instagram. This edition of Horatio’s Curious Companions transforms tea into a multi-layered cocktail experience, blending white tea, hojicha, Ceylon, citrus, honey and Two Moons Calamansi Gin. Each drink reflects Gagan’s mastery of turning tea terroir into a sensory journey with his philosophy of “from farm to bar” that reflects a commitment to craftsmanship, sustainability, and storytelling.

5. Martell x Chef Gastronomy Series

Martell launches Flavours of Martell, a multi-restaurant gastronomic programme pairing fine cuisine with the world’s oldest cognac house. Running through November–December, the series brings together acclaimed chefs such as Michael Wilson (Marguerite), Nicolas Tam (Willow) and Law Jia Jun (Province) with each crafting month-long menus featuring Martell expressions from Cordon Bleu to Chanteloup XXO. Each restaurant offers a menu built around precision, terroir-driven techniques and reinterpretations of heritage through the lens of French cognac. 6. A Fresh Chapter of Rempapa by Damian D’Silva at National Gallery Singapore

Chef Damian D’Silva opens a new chapter for Rempapa, his Michelin-Guide listed heritage kitchen, now located at National Gallery Singapore. More than a move, the relocation marks a personal homecoming for Chef Damian has spent his formative childhood years living in the former Supreme Court caretaker quarters, now part of the Gallery. The new Rempapa continues its mission of preserving Singapore’s multi-ethnic culinary heritage, with a refreshed focus on rice-based dishes. Diners can expect Signature Nasi Lemak sets with Ayam Berempah, Sambal Sotong or Lamb Shank Rendang, alongside homemade Kaya Shokupan Toast and other comforting classics.
