The first and only tiki bar in Hong Kong is now open at the heart of the Central. As many would remember Max Traverse for his old-fashioned’s at Le Boudoir, Honi Honi is his latest project that has been his dream of 8 years in the making. Hong Kong has been chosen as the perfect location to open the bar for the rise in demand for authentic cocktails bars and finely made drinks.

The bar concept is inspired by one of the very first tiki bars in America, Tonga Room & Hurricane Bar at Fairmont Hotel San Francisco with a modernized combination from Trader Vic’s. The timber and bamboo interior and chairs adjustable to comfortable height is the work by Three Wise Monkeys to match Max’s Tiki idea and his finely crafted cocktail menu.
Tiki style cocktails are drinks which mix flavoured syrup and fruit juices with rum. These mixes are usually served in painted ceramic mugs with humanoid carvings that represent tiki culture. In Honi Honi, Max uses fresh fruits for his drink or to contain his drinks in. Here are the few to tease your tiki imagination:
Pina Colada and Lady Bird
The original Mai Tai and Pina Colada that follow the original recipe from Donn Beach, the owner of the first tiki bar restaurant Don the Beachcomber in 1934.
Lady Bird - Pampero Blanco rum, Fraise des bois liqueur, Angostura Orange Bitters, fresh guava juice and fresh strawberries
Miss Behave - JM Agricole Rhum, lychee liqueur, lychee puree, grenadine and Taittinger Brut champagne
Devil’s Tiki Man - Michter’s rye whiskey, Jerry Thomas bitters, fresh lemon juice, fresh ginger, fresh orange wedge, sugar syrup and infused cherry bourbon juice
Maori Spring Punch - 42BELOW vodka, fresh lime juice, fresh watermelon, red thai chilli, lemon grass and honey syrup served in a tall tiki mug.

Try their most expensive cocktail at HK$2,888 for 4 persons - Around The World that is served in a half globe. At any given night of the week, you can have cocktails personally prepared by Max himself and his general manager and award-winning mixologist Fabien Marcault.
