15 Stamford – A Cocktail Journey Down the Pan-American Highway

Known for its extensive rum collection, 15 Stamford at The Capitol Kempinski Hotel has expanded its spirits selection to include a diverse array of gin, vodka, whiskey, bourbon, mezcal, and agave-based spirits. Its latest cocktail menu, Lost Highway, takes guests on a journey through 14 cities along the Pan-American Highway, from Alaska to Argentina. Co-created by Beverage Manager Kavish Hurrydoss and Head R&D Bartender Máté Csizmadia, the menu embraces a philosophy of restrained simplicity, using minimal ingredients to showcase bold, regional flavours.
Each cocktail tells a story of its origin. Our favourites are Beets by Dre, inspired by Mexico, is a playful twist on the classic Paloma. This clarified, carbonated cocktail features Koch Borrego mezcal, Código Artesanal mezcal, and Patron Silver tequila, paired with beetroot, a staple at Mexican celebrations. Grapefruit adds brightness, while the rim – dusted with oregano, capers, lime zest, and pink peppercorn – delivers a savoury kick.
Representing the USA, Apple Bottom Jeans reimagines the iconic Appletini, born in Los Angeles’ nightlife scene. This version blends clarified apple and tomato juices, dry vermouth, and vodka, with a saline solution for depth, topped with a delicate tomato air. Inspired by El Salvador’s love for tangy, spiced fruit, Sun Won’t Set balances tamarind and mango with Ancho Reyes and Los Siete Misterios mezcal. This tropical creation mirrors the local tradition of eating mangoes with lime, salt, and chili powder for a refreshing, bold contrast.

Chef Varun Inamdar’s 40-seater restaurant bar on Orchard has unveiled a new cocktail menu offers a spirited journey through India’s rich tapestry of flavours. With over 22 years of culinary expertise, Chef Varun’s first venture outside India introduces a thoughtfully crafted cocktail menu inspired by Indian herbs and spices, accompanied by an extensive range of bar bites for both vegetarians and meat lovers.
The cocktails are an ode to Indian heritage. Helmed by bartender Alyph, standouts include Captain Scot, a bold Old Fashioned riff honouring the British officer who introduced sour apple cultivation to India’s Kullu Valley. Made with Whistlepig 10YO Rye Whiskey, barrel-aged maple syrup, and garnished with a French baby apple, it’s smoky, strong, and well-balanced. Another highlight is the Colombo No 8 Gin, featuring Chinese ginseng and curry leaf garnish, suitably complemented by Sepoy & Co Indian tonic for an earthy, herbaceous finish. Pair your drink with addictive bar bites like the Signature ‘Chakhna’ Dabba (SGD 28), a vibrant vegetarian platter featuring raspberry murukku and passion fruit banana chips, or go bold with the Duck Galouti Kebab (SGD 36), topped with Australian black winter truffles. ANTO – Where Pizza Meets World-Class Cocktails

The 80-seater ANTO Pizza E Aperitivi brings Italian flair to Singapore, offering bold cocktails and expertly crafted pizzas. Created by renowned bartender Giancarlo Mancino (which brand of vermouth are seen behind many cocktail bars), the signature creations steal the show. The Pineapple Pizza Negroni (SGD 25) offers a playful twist with pineapple gin, ham, tomato bitters, and freeze-dried mozzarella. The Classico (Anfora) (SGD 25), a rich blend of gin, vermouth, and bitters, is ideal for pairing with the hearty pizzas.
Food menu by Master Pizzaiolo Antonio Brancato feature three styles of pizza: In Teglia, Classic, and the boundary-pushing Le Antonio. A standout from the Le Antonio range is the Rustica (SGD 38), combining tomato sauce, salsiccia fresca, smoked Scamorza cheese, and rosemary for a unique interplay of smoky and savoury flavours. Astor Bar at The St. Regis Singapore launched of its New York New York Volume 2 cocktail menu, a tribute to the original St. Regis New York. Inspired by five iconic New York neighbourhoods – Lower Manhattan, Midtown, Upper Manhattan, East Side, and West Side – this refined cocktail selection offers a multi-sensory journey through the stories and culture of the East Coast’s most vibrant city.
Signature highlights include Korean Square (SGD 28), a bold Soju-based cocktail with chilli-infused gin, reflecting the vibrant fusion of cultures in Midtown’s Korea Town. For something more classic, try Cotton Club (SGD 32), a whisky sour inspired by Harlem’s legendary jazz scene, complete with a toasted honeycomb garnish. Both drinks showcase Astor Bar’s commitment to creative mixology and craftsmanship.
Complementing the cocktail experience is The Violet Hour (6pm daily), an elegant evening ritual celebrating the transition from day to night with bespoke Martinis served in custom glassware. Perched atop Esplanade Mall, Baia is the latest rooftop dining lounge and bar by ilLido Group’s Beppe De Vito. Inspired by the lavish coastal retreats of Roman aristocracy, Baia offers a luxurious 5,000-square-foot space with Roman arches, marble finishes, and panoramic views of Marina Bay. With seating for 136 guests indoors and 72 in the al fresco area, Baia sets the stage for elevated indulgence, refined hospitality, and expertly crafted cocktails.
Leading the bar programme is Adonis E. Reyes, a veteran mixologist with 15 years of international experience at venues like Origin Bar at Shangri-La Singapore and Brad Street Kitchen by Gordon Ramsay. A celebrated competition finalist and known to guests as the “liquid psychiatrist,” Adonis brings both technical expertise and a warm, personable touch to Baia’s cocktail experience.
Baia’s cocktail menu, curated in collaboration with Proof & Co, is divided into three sections: Sol for refreshing aperitifs, Nox for bold evening libations, and Mosaics for shareable punches.
The Sorrento Coast (SGD 22) reimagines the classic Martini with a briny, herbaceous depth, combining vodka, Mancino Secco & Bianco vermouth, and pickled grape for a savoury yet elegant sip. The Singapolitan (SGD 26) offers a refined spritz with a local twist, blending Brass Lion Gin, plum wine, salted strawberry, and prosecco to create a delicate balance of fruitiness, floral notes, and effervescence. For those craving a bold, spirit-forward experience, Lost Wonders (SGD 24) flips the Old Fashioned on its head, pairing Michter’s Bourbon with Banana Marsala and chocolate for a rich, velvety drink with deep, warming complexity.

With seating for just 30 guests, this cosy, community-driven space is helmed by industry veteran Head Bartender Marcus Liow, whose menu of 14 signature cocktails celebrates Chinese principles of love, harmony, and abundance. The bar’s highlights include the Passionfruit Martini (SGD 24), a refreshing concoction made with Tanqueray No. 10 Gin, passionfruit oolong-infused dry sake, and citrus, topped with a velvety passionfruit & sea salt foam. Another must-try is the Mango Spicy Margarita (SGD 26), a bold mix of Don Ramon Reposado Tequila, mango peel oleo saccharum, and bird’s eye chilli, balanced by house-made salted caramel and a vibrant mango lime sorbet.

Located in Pullman Singapore Hill Street, MOGĀ redefines the Izakaya experience with its new ‘Breaking the Norm’ menu. Recently appointed Bar Manager Gavin Teverasan, known for his work at top establishments like 28 HongKong Street and Barbary Coast, teams up with Head Chef Leon Quek to offer. The concept pays homage to its namesake, the “modern girls” (mogā) of Japan’s Taisho era, celebrating vibrancy and defiance of convention.
The cocktail menu is divided into two categories – Izakaya and Modernity – offering eight crushable Japanese-inspired cocktails and eight reimagined classics. Standout creations include The Frozen Drink (SGD 24), a whisky-forward cocktail blended with taro liqueur, cream, azuki beans, and matcha, evoking nostalgic Japanese summer desserts. Another must-try is the Dirty Saketini (SGD 22), a savoury twist on the classic Martini, made with sake, shochu, and house-made pickling brine for an umami-rich experience.
